Contacts Selector: Customize Columns

I previously submitted https://projectsight.ideas.aha.io/ideas/PSW-I-1315, to add Title and Project Role fields to the contact selector, as that would seem to be the easier change, and accomplish most of the change we want to see here, but I think it would also be valuable to have the option to customize the columns on the contact selector.

I think that having Portfolio/Project configuration would be a good solution here, but some users might want their own control. I think whatever is easier from a development standpoint is fine here.
